Green sauce! What the hell is it? When I first set eyes upon the stuff I recoiled – what was this slimy mess covering not one but two hard-boiled eggs? One suspicious nibble later and I was hooked; turns out that it’s delicious/ lecker/ delizioso/ вкусные/ おいしい…or whatever it is in your target language of choice. It’s so good in fact that Frankfurt has its very own festival dedicated entirely to the sauce.
The whole city becomes swept up in the green fervour…and this year we’ve been swept along with it – that’s right Speakeasy is having its very own Green Sauce (Grüne Soße) festival! There shall be a variety of this Hessisch speciality to taste; and we are encouraging all of you to make your very own. Give it a go! And why not add some flare from your culture?! A Chinese flavour perhaps, a Turkish twist or, even, a Mexican wave. Throw the rulebook out the window and get stuck in (a useful phrasal verb right there).
The basic Hessisch’ recipe:
250g herbs (parsley, chives, chervil, borage, sorrel, garden cress, and salad burnet)
250g sour cream with 20-25% fat
2 hard-boiled eggs
2 tablespoons mayonnaise
1 teaspoon lemon juice
salt & pepper
